10 Freshly Harvested Water chestnuts (Eleocharis dulcis) - $20 - (Crawfordville, FL)
These lots of ten water chestnuts (Eleocharis dulcis) are freshly harvested as ordered. The small, rounded corms have a crisp, white flesh and is mostly eaten raw but can also be slightly boiled, or grilled, and are often pickled. I grow them in "kiddy" pools in 6 inches of soil and they are covered with several inches of water year round. For keeping until growing season start them in a 2 1/2 gallon bucket with about 3 inches of sandy loam. Add about 4 inches of water and when the mud settles place the corms in the mud. The plants will start to emerge in a week or so, depending on the weather. Keep them inside in a warm sunny spot and make sure to keep them covered with water. They can be planted outside in shallow ponds, "kiddy" pools or other wet habitats when the temperature is at least in the mid 60's during the day and no colder than 45 at night. I put about 6 inches of sandy loam in my pools and plant the corms about 2 feet apart. I keep at least 4 inches of water over top of the soil. They love full sun and do not need any shade. These plants grow quick and they spread quick. As you thin them out you can keep adding more pools to increase your harvest. They can be harvested in the fall before the first frost.
